Cauliflower with Parmesan cheese sauce

Cauliflower is a must for Christmas. Prepare it with this creamy Parmesan cheese sauce.

Ingredients (serves 4 people)

  1. 16 baby cauliflower heads or 2 large heads
  2. 60ml butter
  3. 45ml cake flour
  4. 500ml cream
  5. 100g Parmesan cheese, finely grated
  6. Salt and freshly ground black pepper to taste
  7. 5ml nutmeg


1. Bring pot with water to the boil. Add cauliflower and boil for 5 minutes or until cooked. (If you are using the large heads, boil for longer).

2. Place butter in a medium-sized pot and melt over high heat. Add flour and stir with a wire whisk until mixed well. Add all the cream and mix until all the lumps are removed. Leave sauce to cook until it has diminished by half. Stir every now and again so that it doesn't burn. Remove from the heat and add Parmesan cheese. Stir until smooth and season well with salt and black pepper.

3. Place cauliflower on a serving plate. Pour sauce over and sprinkle with nutmeg. Serve warm.
