Banana and oat biscuit sandwiches with a cream cheese filling

Made from super healthy ingredients, these biscuit sandwiches are anything but boring. They’ll fly off the plate so fast, you should consider baking a double batch.

Ingredients (serves 4 people)

  1. 200g (2 peeled) banana flesh, chopped
  2. 55g (½ cup) coconut flour
  3. 100g (1 cup) oats
  4. 60ml (¼ cup) honey
  5. 60ml (¼ cup) vegetable oil
  6. 2.5ml (½ tsp) ground cinnamon
  7. 2.5ml (½ tsp) ground ginger
  8. 200g (1 ½ cups) ready-made muesli
  9. 250ml (1 cup) low-fat plain cream cheese

Directions

1. Pre heat the oven to 180°C and line a baking tray with some baking paper. Share it Be the first to like Save it Print it

2. Place the banana flesh, flour, oats, honey, oil, cinnamon and ginger in a food processor and blend. Stir in the muesli.

3. Use your hands to form the mixture into 8 balls. Place onto a baking tray, leaving some space in between each biscuit. Slightly flatten each ball with the palm of your hand.

4. Bake for 20-25 minutes until golden. Let it sit on the tray for 5 minutes before transferring to a cooling rack.

5. Once the biscuits have cooled. Spread a bit of cream cheese onto the base of one biscuit and top it with a second one to form a “biscuit sandwich”. Repeat with the rest of the biscuits.
