Balanced Lunchbox Ideas for School - Eggs in a Nest Friday Lunch

Fun and full of crunchy goodness - an egg sits on a sweet nest of shredded carrots, surrounded by its own little vegetable garden. This never fails to spark a child’s imagination.

Ingredients (serves 4 people)

  1. 2 carrots, grated
  2. 1 teaspoon Dijon mustard
  3. 1/2 tablespoon lemon juice
  4. 1 tablespoon extra virgin olive oil
  5. 5. 1 teaspoon honey
  6. 1 tablespoon parsley, chopped
  7. Salt and pepper to taste
  8. 1 hard-boiled egg
  9. Handful of broccoli tops and green beans
  10. Stone fruit in season (apples, pears or peaches)


1. In a bowl, combine mustard, lemon juice, honey, olive oil, salt and pepper.

2. Add grated carrots and fresh parsley and toss well. Adjust seasoning to taste.

3. Place a scoop of carrot salad on a bed of lettuce.

4. Cut a hard-boiled egg in half and place yolk-side down in the nest of shredded carrot salad on a bed of greens.

5. Surround with green beans for branches and broccoli florets to give volume to the tree.
