Balanced Lunchbox Ideas for School - Mediterranean Monday

Never have enough time in the morning to pack a nice lunch for school? Plan meals-to-go for your kids that can be made in a flash and that taste as delicious as they are healthy. Make a batch of hummus for a fun dip with vegetables. A scoop of hummus is protein-rich with healthy fats and lots of vitamins and minerals. Store the remainder in the fridge (add a bit of olive oil to moisten) and serve with roast lamb at dinner during the week.


Ingredients (serves 4 people)

  1. 1450g tin of chickpeas (with ¼ cup liquid)
  2. 3-5 Tablespoons lemon juice (to taste)
  3. 1-1/2 tablespoons tahini (sesame paste) - optional
  4. 2 cloves garlic, crushed
  5. 2 tablespoons olive oil
  6. 1/2 teaspoon salt
  7. Parsley sprigs
  8. Handful of baby carrots, cherry tomatoes and cucumber strips
  9. Half a pita bread
  10. Fruit shish-kabobs: grapes, melon balls and orange segments

  1. Combine chickpeas, lemon juice, tahini (optional) and garlic in a blender or food processor.
  2. Add 1/4 cup of liquid from chickpeas.
  3. Blend for 3-5 minutes on low until mixed and smooth.
  4. Mix in a small amount of olive oil to taste and garnish with parsley.
  5. Dessert idea: Poke a combination of fruit on a stick for a fresh sweet kabob, dipped in hummus.
