Baked Toffee Apples

These deliciously decadent baked apples with toffee-laced filling and cream sauce bear no resemblance to the hard, sticky toffee apples of your youth. Great as a show-stopper dessert or wicked afternoon snack.

Ingredients (serves 4 people)

1. 4 apples
2. 60 ml pecan nuts, chopped
3. 2 ml cinnamon
4. 100 ml soft caramel toffee, chopped
5. 30 ml sultanas, soaked in brandy
6. 60 ml brown sugar
7. 60 ml butter
8. 5 ml of brandy
9. 15 ml cream
10. Whipped cream or ice cream for serving


1. Core four apples, without cutting right through to the bottom.

2. Mix together peacan nuts, 40 ml chopped soft caramel toffee, ground cinnamon and sultanas that have been soaked in brandy.

3. Spoon the filling into the apples.

4. Wrap the apples in tinfoil, place them onto a lined baking tray and bake in a preheated oven at 180°C for about 20 minutes or until cooked.

5. Heat butter, brown sugar and 60 ml chopped soft caramel toffee together in a saucepan. When melted, add 5 ml brandy and 15 ml cream.

6. Spoon over the hot apples and serve with whipped cream or ice cream.
