Baked (tangy) potato wedges in 40 minutes

Only two minutes prep time! These take a long time to cook but are so easy to make and they can be baking away while you’re getting on with other things.

ngredients (serves 2 people)

  1. 1 Washed King Edward or Maris Piper potato
  2. olive oil
  3. Optionally add chilli oil
  4. paprika
  5. tangy grated parmesan cheese


  1. Wash King Edward or Maris Piper potatoes – one large or medium potato will make about five or six wedges.
  2. Leaving the skins on, cut each potato in half, lengthways, then cut into two or three wedges per half, again cutting lengthways.
  3. Don’t cut them too thick as they won’t cook through, but also don’t make them too thin or they will just burn.
  4. Put the wedges in a food bag with a slosh of olive oil and shake so they are all well coated.
  5. Place the oiled wedges in a baking tin and bake in a pre-heated oven at gas mark 6 (or 200ºC or 400ºF) and bake for at least 30 minutes, turning occasionally and making sure they’re all well cooked through.
  6. If you want your wedges to be more tangy, either add just a splash of chilli oil along with the other oil when tossing the wedges at the start, or sprinkle with paprika or tangy grated parmesan cheese when the wedges have about 10 minutes more to cook.
