Ingredients (serves 8 people)

  • 1/4 cup butter, softened
  • 1-1/4 cups gluten-free chocolate cake mix
  • 1/2 cup milk
  • 1 large egg, slightly beaten
  • 3 tablespoons warm coffee


1. Preheat oven to 350 degrees.

2. Line 8 holes in a muffin tinwith paper liners.

3. With an electric mixer, creamthe butter until light and fluffy.

4. Add baking mix, milk, and eggs, beating just until combined.

5. Add coffee and stir until smooth.

6. Fill each muffin hole 2/3rds.

7. Bake for 20-25 minutes until cake tester comes out clean.

8. Cool on wire rack.
