  • 2 large, very ripe bananas, mashedwell
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 cup flour
  • 1 cup sugar
  • 1 teaspoon soda
  • pinch of salt
  • 1/4 cup maple syrup
  • Maple Glaze:
  • 1/2 cup confectioner’s sugar
  • 1/4 cup maple syrup

1. Preheat oven to 350 degrees and grease an 8-inch pan.

2. Combine bananas, oil, vanilla and eggs.

3. In separate bowl, whisk flour, sugar, soda and salt. Fold into banana mixture just until combined.

4. Pour batter into pan and bake for 40-45 minutes until cake tester comes out clean.

5. Whiskmaple syrup into sugar until smooth. Cool cake for 15 minutes, and then drizzle with maple glaze.
