Apple Bundt Cake Recipe

Traveling is a great way for families to bond, but as the hours go by, energy flags and crankiness can set in. These 5 cakes are guaranteed to lift your spirits and keep things humming along. For easy packing we’ve eliminated messy frostings without sacrificing taste. Slice and wrap portions individually, or fit together in one convenient container.

Ingredients (serves 8 people)

  • 1-1/2 cups canola oil
  • 2 cups sugar
  • 3 eggs
  • 3 cups flour
  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1-1/2 teaspoons vanilla
  • 3 apples, peeled, cored and chopped
  • 1 cup pitted dates

Directions

1. Preheat oven to 350 degrees and grease a Bundt pan.

2. With electric mixer, beat together oil and sugar untilwell combined. Add the eggs, one at a time, and beat until smooth.

3. In separate bowl, whisk the flour, salt, cinnamon and baking soda. Fold into batter.

4. Add the vanilla, apples, and dates and stir just until combined.

5. Pour into Bundt pan and bake 60-80 minutes until cake tester comes out clean.

6. Cool onwire rack. Run a knife around the edge and then unmold.
