3 Recipes That Say “I Love You Dad” On Father’s Day.

The way to a dad’s heart is through his stomach.


Serve these 3 recipes on Father’s Day and rest assured, it will be a Happy Father’s Day for certain! You know the old saying about the way to a man’s heart, don’t you!

1) Low Fat Pepper Chicken Dry

This is a traditional Andhra style chicken dish. Marinated in pepper, turmeric and cooked in subtle spices, this spicy chicken recipe is perfect for the calorie conscious.

Cooking Time: 35 Minutes + Marinating Time (30 Minutes)

Serves: 2

Ingredients:

1 kg chopped chicken
1 tsp ginger-garlic paste
1/2 tsp turmeric powder
2 onions
1 green chilli
Curry leaves
2 tsp crushed pepper
Oil
Salt

Method:

- First, you have to marinate the chicken with crushed pepper, turmeric powder and salt.
- Now simply keep it aside for half an hour.
- Next up, add 2 tsp cooking oil, chopped onion in a wok and fry for a while.
- To this, you have to add the sliced green chillies, curry leaves and ginger-garlic paste. That done, stir it for approx. one minute.
- Now, just add the marinated chicken to the mix and allow it to cook for 15 minutes.
- Almost done! Garnish your chicken with freshly chopped coriander leaves.
- Serve it nice and hot with bread or rice.


2) Paneer Anardana Kebab

Juicy cubes of paneer marinated and served with crispy capsicum and a dripping sauce.

Cooking Time: 30 minutes

Serves: 4

Ingredients:

500 g paneer
2 medium tomato, cut into 1 square inch pieces
2 medium green capsicums cut into 1 square inch pieces  
1 tsp Chaat masala 
3 tbsp Oil

For Marinating:   

1/2 cup hung yogurt   
1 tsp garlic paste   
1 tsp ginger paste   
1/2 tsp garam masala powder   
2 tsp anardana powder
1/2 tsp kashmiri red chilli powder   
A pinch turmeric powder
1 tsp lemon juice  
2-3 tbsp fresh cream
Salt


Method:

- To make these juicy kebabs, start by cutting paneer into cubes that are an inch and a half tall and about half an inch thick.
- Now, mix together all the ingredients meant for marinating and use them to marinate the paneer cubes.
- Don’t touch it for about fifteen minutes.
- In the meanwhile, heat some oil in a tawa, place the paneer cubes and shallow fry them till they turn a lovely golden brown colour. Also, they should be crisp on the surface.
- Once they are fried, drain them on an absorbent paper.
- Now, toss the capsicums and tomato pieces in the remaining marinate and sauté them in the remaining oil on the tawa for 2 - 3 minutes.
- Place a capsicum and tomato piece on each paneer cube and pierce with a toothpick or you can skewer several of them too. Sprinkle some chaat masala and it’s good to eat!


3) Gulkand Cup Cakes

This easy-to-bake, eggless cupcakes recipe tastes heavenly courtesy the aroma and flavour of the sweet rose petal preserve, namely, gulkand. Easy to whip up, easier to eat up! Ideal if you’re celebrating Father’s Day with the entire family.

Cooking Time: 60 minutes

Serves: 12

Ingredients:

200 g plain refined flour
1 tsp baking powder
1 tsp baking soda
100 g sugar
100 g milk powder
1 1/4 cup milk
100 g melted butter
50 g gulkand
1 tsp cardamom powder


For the frosting:

120 g powdered / breakfast sugar or icing sugar
150 g unsalted butter at room temperature
4 tsp rose water
2 tbsp toned milk
Fresh rose petal for garnish


Method:

- First up, preheat your oven to 180°C.
- Now, line the muffin tray with all the muffin cases.
- Mix the flour, milk powder, baking powder & baking soda well.
- Next, whisk butter & sugar for 5 minutes in a separate bowl until fluffy.
- Fold in the flour mixture into the butter & sugar mixture. Remember, no lumps should be formed.
- To this, add the cardamom powder. Mix it well and pour the batter into the muffin cases. Fill each cup to 3/4th of its capacity.
- Bake them for 25 minutes and then cool on a wooden board. Bear in mind, they have to cool completely before frosting.
- Now, simply scoop the centre of the cupcake and fill it with gulkand.
- For the frosting, whisk the butter until fluffy with a hand blender.
- To this, add rose water and sugar and stir till the right consistency has been achieved
- Simply pipe it on top of the muffins.
- Now, garnish with a fresh rose petal on top and you’re done.
