Super easy Italian inspired recipes

Use these quick, delicious recipes for a wonderful Sunday supper with family and friends.

Gathering for Sunday suppers is a perfect way to close a weekend. It’s a time when family and friends get together for a relaxed meal without the rush of a jam-packed weekday. Want to start your own Sunday supper ritual?

Here are three Italian-inspired ideas to get the party started.

DIY Pizza Party

Everyone loves pizza — especially when you can top your pie with your favorite fixings!

For starters, invest in a pizza stone, cooling rack, wood paddle for easy pie transport and a cutter for slicing. (If you can’t get your hands on a pizza stone, put the pizza right on your outdoor grill.)

As for dough, most supermarkets offer at least one variety, ranging from plain to herbed to whole wheat. At home, clear enough counter space to create an assembly line and have guests prep their pizzas in three stations: dough rolling, sauces and toppings.

Think outside the (pizza) box and choose adventurous add-ons like caramelized onions, fresh figs and Gorgonzola cheese crumbles. Let kids customize with meats and veggies, but be sure to have the standard marinara sauce and mozzarella cheese on hand. When the pizzas are done (about 15-20 minutes in the oven at 425 F), drizzle with olive oil, snippets of basil and red pepper flakes. Serve with a simple green salad and finish the meal with a DIY sundae bar.

Sunday Sauce

Italian cuisine is famous for its sauce, or as some prefer to call it, gravy. No matter how you say it, here’s how to make your own:

Ingredients

  • 3 cloves of garlic, minced
  • 1 medium onion, chopped
  • 1.5 to 2 pounds of ground meat (beef, veal, pork or a combination)
  • 3 16-ounce cans of tomato sauce (or 3 pounds of fresh, mashed tomatoes)
  • Oregano, rosemary, parsley and basil to taste
  • Salt and pepper to taste

Instructions

  1. Using a big stockpot over a low flame, begin by sautéing the garlic and onion, in olive oil until translucent
  2. Add meat and cook until browned
  3. Add tomato sauce fresh tomatoes
  4. Bring to simmer
  5. Add herbs
  6. Cook for 1-2 hours, stirring occasionally.
  7. Add salt and pepper to taste.

Be sure to make enough sauce to freeze for a baked pasta dish like lasagna or ziti with spinach and ricotta — great options for next week’s Sunday supper.

Now for the fun part: Offer a few pasta options, like gemelli (little twists), large shells, orecchiette (little ears), or basic linguine or spaghetti. Pair your pasta with a green salad and easy homemade garlic bread: Slice a baguette and toast in the oven until golden. Using fresh garlic, rub cloves on the toasted side, drizzle with olive oil and sprinkle with sea salt. Perfecto!

Tuscan Roast Chicken

Every cook should have a good roast chicken recipe in her repertoire, and this one really fits the bill.

Ingredients (serves 5)

  • 1 5-pound chicken
  • Potatoes, acorn squash, Brussels sprouts, beets, carrots, cut into chunks
  • 1 to 2 tablespoons of olive oil (set aside more for a rubbing onto chicken skin)
  • Salt, to taste
  • 1 half large onion
  • Optional: 1 stick butter, brought to room temperature
  • Rosemary sprigs

Instructions

  1. Pre-heat oven to 425 F.
  2. Arrange vegetables to fill the bottom of a roasting pan, drizzle with olive oil
  3. Mix medley with your hands.
  4. Remove giblets from chicken and sprinkle cavity and outside skin generously with salt.
  5. Cut an onion in half and place half of the onion in the cavity along with a handful of lemon wedges.
  6. Place chicken on top of veggies and rub skin with olive oil or softened butter.
  7. Top with rosemary sprigs and place in oven for 1 to 1 1/2 hours, until skin is golden and juices run clear.
  8. Serve with a simple salad and nice crusty bread.
